Yes, you can't rate an anime series based on the first part of it, but you can rate an anime series without watching things from different genres. :P
Watching different genres may change your ideas, but then, there's so many other things which may as well, such as lifestyle decisions.
It's not really a question of whether u "can' or "cannot" rate an anime based on some given factor. It's a question based on the quality of the rating.
All factors u mentioned will cause inaccuracy in your ratings.
Rating based on the 1st few episodes may be inaccurate because the 1st few episodes may not reflect the rest of the anime.
Rating when you've only watched things from a single genre leads to a narrower scope, and less basis to make a comparison on, and thus it will also effect the accuracy of your ratings.
The magnitude of the inaccuracy will depend on the magnitude of the factors. So u can't really say that your ratings when you've watched no other genre will necessarily be more accurate than the ratings when u only watched the 1st few episodes either. I all depends on how many of the starting episodes u watched, what kind of anime it is, how much did u limit yourself to one genre and heaps of other factors.
