For you, 500W is probably way more than enough. An 380W PSU could easily power my machine (Core2 Q6600, RadeonHD 4670) so giving plenty of leeway for higher powered GPUs, 500W is plenty, just get one made by a reputable brand.
What GPU do you have in mind?
The gtx you have to connect with 1x 8pins and 1x 6pins to the psu, and yes for Sli 600WATT is ok!

I agree that even 600W is sort of pushing it, but Its better to go for it anyways.
