Actually, considering my usage patterns, I'm seriously considering switching to some Linux.  Haven't played any modern game in ages and rarely do any video processing these days.

go with debian or slackware

lol, i tried ubuntu 9.10, but the drivers didnt work. so then i went to debian. Madwin of a distro.
if your super interested in learning the UNIX kernel, go with slackware.
if you want ease of use, go with ubuntu
if your like me, and want a bit of a challenge, while still being able to use most of everything, go with debian. (my new favorite)

I'm currently more interested in Fedora Core actually (main problem is that the Uni's AARnet mirror doesn't show it because the DVD ISO is too big or something; the CD ISOs are there though, see if I can make it install from a portable HDD).  Am somewhat more used to RedHat based distros (this server is running CentOS), though I have run Debian/Ubuntu servers too.  Not that much difference, perhaps, from what I notice, just different conventions.  It's all the same underlying system anyway, just mostly different packaging I think.  I do know that the FC installer does allow you to select what packages gets installed by default.

Main current concern is probably still drivers, mainly my TV tuner.  All my other hardware is fairly standard (don't have wireless stuff).

By the way, don't confuse Linux with Unix :P

Pretty sure it runs on a Linux kernel, so being Unix like doesn't really help you understand the original Unix kernel...
