RE: Best homebrew Apps + Games?
I actually stuck some eBooks on my PSP when I went out on holidays last time - they work pretty well, since the files are small, plus reading it doesn't use much battery. I guess you could question about bringing books instead, but the PSP's somewhat smaller (and you can read it in the dark, if the place you're staying at doesn't have a bedside light).
So for homebrew, I'd say Bookr if you don't mind reading.
Can't recommend any homebrew games - they're great, but unfortunately, I wouldn't really play them for hours on end...
Plugins... personally use brightness control + vshex mod (CPU speed changer), but I think another plugin may include the 5th darkness screen level for the PSP, and most people are content with the XMB's CPU speed control.
Can't recommend for the other 3...

RE: Best homebrew Apps + Games?
Movies....get a full Series of a TV show you watch, convert it, and use PMPlayer to watch it while underclocked (gets way more mileage than the XMB player)
Homebrew games....Snes or Megadrive/Genesis emulator is a must have for me, as is GBA, although that's for playing my own games to get further. There are plenty of fun games out there if you look though, i just can't think of any atm
Music: METAL!!!! Really annoy the other passengers
As for the rest...no idea

poo poo! How could I forget the emulators!
By the way, if you're in dark areas a fair bit, get the Brightness Control plugin for the 5th darkness level (I typically find the lowest brightness level too bright at times) - you can run it in PMPlayer AdVanCe. Unfortunately, an issue with PMPlayer is that it seems to have issues fastforwarding/rewinding longer videos, when you get further into the video. This only applies to MP4 files however - if you convert to PMP, you won't get that issue.

RE: Best homebrew Apps + Games?
games I would suggest either of Echochrome, patapon and/or a Final Fantasy, and GOW. This covers up all moods.
Music: again don't stick to one genre only. Have a collection of good OSTs, rock, metal, techno, rap. Choose your favourite artists. Of course, stay away from Pop...
Videos: can't think of any, except maybe a couple of anime episodes...
Homebrew: I only ever used Bookr, so that would be my suggestion.
Plugins... no idea.
EDIT: Horrible eenglish

RE: Best homebrew Apps + Games?
..does your plane have WiFi service, by the way? I heard some do have it in the UK (don't know where you live).
Well, as for games (non-homebrew), games like Crisis Core and Syphon Filter: Logan's Shadow are really good.
