Probably, but even if you don't need a persistent web connection, there'll still be an initial download hit.  Plus, the more "offline" they make it, the less useful it is over MSOffice.

Security wise, it may be over a secure connection, but it's still less secure than working through an internal network (in general).
The other issue is that I don't think many companies fancy the idea of storing sensitive documents on Google's servers.
