But on a more serious note, the function of the kill switch is to enable Apple to browse the applications on your iPhone and deactivate them at their will... double you tee eff happened to Privacy or Its-my-phone-go-to-hell?

It's in case they accidentally allow a malicious application on the App store, so they can disable it so it doesn't do any damage. Although it is a bit invasive, it's trying to keep your iphone/ipod touch from bricking itself.
this is like saying "Sony keeps tabs on PSP so that they don't brick.." read between the lines, no cfw as Sony will just lock the PSP due to illegal application.

though technically this doesn't happen, but it could.,

if the custom firmware doesn't disable such function, then you deserve a locked PSP

since that service relies on a P2P like connection, i bet they can't kill anything if the iphone doesn't have signal

Apple has openly endorsed Jailbreaking though. They've come out and said they're okay with it. It's not like Sony falsely saying that you're breaking the law.

But unless you keep your iPhone in Airplane mode forever, which defeats the purpose of the whole phone thing, that won't really work.

Not to sound fanboy-ish or anything, but the only reason they did this is to cover their asses in case they accidently let a harmful program through, not to disable your programs willy-nilly. I mean, there are tons of apps that have been taken down from the store so far for various reasons, like PhoneSaber, iPint, and BoxOffice, but all of my friends who have these now-extinct apps can still use them. iTunes doesn't delete them, and neither does this kill switch.
.. just don't get iPhone. Much easier.
