Has plenty of problems, but Droidwall may be of assistance.  If the app can't access the network, there's less that it can ultimately do with your info.
There was also a permissions app which could deny permissions or similar, but I couldn't get it to work.  Android's app permission system could use some improvement, but I doubt it's going to happen.
