As I understand it, in general, harem = multiple girls fighting over one guy. Multiple generally means ≥ 3, but I don't see a hard rule about it, or anything that says 2 is not okay.

the problem I'm having with it is quite specifically story depth. Its suffering the same way as Hanbun no Tsuki ga Noboru Sora did.

Don't know if there's any hard textbook rule (never did serious research on it), but I'm very sure 2 wouldn't be considered a harem. 2 is a normal love story.

That's probably more the typical harem rather than a definition. Just because most comedy/romances involve ecchi, doesn't mean it's a requirement for one.
KgNE has two primary girls, though the others do show hints of some subtle crush, particularly Akane (which is explained a little further in the spinoffs).

Problem with it is that its story struggles to provide replay value as its rather predictable in as much as what the character can/could do next.
While KgNE is doing much better in terms of replay value - it feels... rather short sighted in comparison to the amount of character development and variety/depth of story in something like Kanon or Clannad.
I think I'm just being paranoid, cause I know the story can't "expand" that much.
Makes me have an appetite for Shuffle! all of a sudden......

I care next to nothing about replay value, because according to me, it's never worth it watching something again. But I were to compare replay value, I'll say all the story shows will get donkey raped by the action/comedy/any other non heavily story based shows, and all the visually average shows will get donkey raped by all the visually outstanding shows... So story shows like KgNE, AIR and Kanon with average graphics would be the stuff I least want to re-watch.
It's a while since I watched KgNE, so I can't really remember clearly, but I remember it having good development. From what I do remember, it's very realistic, has a very well rounded story with pretty much no flaws, and creates and captures the mood extremely well, from the start all the way to the end.
Elaborate more on this "amount of character development and variety/depth of story" you see in AIR / Kanon...

well the characters are given a very nice amount of background and dedicated story time.... perhaps I like the expansiveness of that (this is especially evident in Kanon and CLANNAD S1).
And your right about the realistic-ness. Perhaps that's its limiter. I can't remember how on earth KgNE goes on for as many episodes as I have left (I think theres 6 left). But the repetitive themes (one of them doing something significant in one epsiode and then END - most other series are more proactive but again this can be blamed in realistic-ness) of their personalities is a distinct feature of this Anime ~ you don't find it in other animes.

Your "depth of story" is just the back story? So Key won you over because they put in a back story... lol
And Kanon's back stories are somewhat unrealistic anyway. how everything's linked together, how the love from back then (probably just childs play) carries over 7 years when they hardly know each other any more, and how the guy just suddenly lost his memory, for whatever reason is never explained.

I reckon this kind of thing is a feature of re-watching stuff. 1st time I enjoy the stories. The 2nd time I watch something I already knows the main story, so instead of concentrating on the story, I generally end up concentrating on what the story f ucked up on (nitpicking errors), and how the drawings are bad, and stuff like that. Another reason I don't want to re-watch stuff.
