I run OS X on a real Mac (Intel) with an ATI X1600/256MB, 4GB of Ram, and a Intel Core Duo 2.1 GHz.
People want to run OS X for it's Graphics quality over *nix and Windows. I use Final Cut Pro, and I could use more ram.
OS X it's self needs a minimum of 1GB ram, and with that it runs like poo poo, 2GB is much better and like I said "should work for most things", but more will not hurt as Mac OS is a RAM hog. (Why do you think they sell system with up to 16GB of RAM)
The CPU is a bit slow seeing it's a 1.68GHz it is most likely a Celeron M. Again like I said "but will work just fine".
So yes you are correct, you just a need to know what Mac's really need to run very good, not just run. I don't see the point of installing OS X on a kind of low end machine when Linux of Windows would run so much faster on the same system.
For a "just to see" install it 100% fine other than the Nvidia card.
