You can try downloading these apps
-Minimal Text (For displaying information)
-Desktop Visualizer (Custom Icons/Panels)
-Widget Locker (Custom Lock Screen)
-ADW Launcher EX/Launcher Pro they both work pretty well though I prefer ADW Launcher EX.
You can set custom icons using Desktop Visualizer/ADW Launcher EX.

Totally looks like ADW will be my new top launcher, Go Launcher kinda lags my phone. ;_;
CyanogenMod 7 also has a theming engine, where you can buy themes from the android market, also, I reccomend an app called tasker; Tasker can make custom overlays, silence the ringer, etc, all based on custom set variables.
how do you do custom overlays with tasker!?! i bough it for 2 minutes and got the refund...didn't see the point of it, mostly seemed like 'if you run this app do this' or something...
