Allows theming with winterboard or dreamboard, extra utilities and features such as SBSettings, which allows you to toggle Wifi and other features without trawling through setting menus. Also Installous if you want free apps, but don't do that piracy is BAD ya hear!
Basically, complete freedom to do anything with your iPod.

use WinSCP (on Windows, dunno about Mac) to SSH into your iPod's flash memory and transfer files across. But Cydia has Winterboard and a library of themes anyway...
iPhone Browser works very well if you dunno how to use SSH.

ok uh i have the WinSCP and how do i use it?
use SBSettings on the jailbroken iPod to find your wifi IP address, type that into the "Host Name" box in WinSCP.
The username and password is "root" and "alpine" respectively.
Then press login and you should have complete access to you iPod's storage.
You also need OpenSSH from Cydia for it to work.
