I use the Sennheiser HD-25 for live gigs and I absolutely love them! These things will seriously blow your mind, although not particularly practical.
For iPod use I use the Yuin PK2 - Very happy with them too. I've heard lots of good things about the Sure SE series, but if you're a true audiophille you should check out the Ultimate Ears range!

Nah but my window of opportunity for getting the ex500's is slipping away, so can any of you reccomend any of them off that list?

No like can anyone actually recommend a particular pair of them (wish i had those ones up there :D) because I really don't want to make the wrong choice

The only way to choose really is to actually go and try them. If you're serious about them then you won't mind going out to an electronics shop or even better a dedicated hifi equipment shop to try them out. That's the only way to make a good decision. Different 'phones suit different people. You may have an exceptionally wide head (like me) so a pir that has received a 10/10 rating may be completely unsuitible because they're damn uncomfortable. I've spent a fair amount on headphones over the years (more than I've spent on things to play through them) and I'm still not too happy.

Thanks. I couldn't try them out, so I just went with the EX500s.
They're good headphones, I'd give them an 8/10.
Pros:
-Great quality build & audio
-Awesome Highs and Mids
-Looks cool
-Adjustable cable (with dongle thingy :D)
Cons:
-Not great bass
-Fiddly, take a little while to position in my ear correctly.
