IDE cd/dvd drive is fine...but sata 3.0g/s harddrives are the only way to go!
Also if you have any ambition on running OSX on your PC then i would suggest a sata dvd drive as well!

I prefer seagate because they have 3 or 5 year warranties! How can you beat that!
Plus when you get ot the 4.5 year mark you can usually send it in and get something bigger because they may not make that size anymore :O

Do i need two Graphics Cards because the MOBO is SLI?

You don't need to run SLI
All that means is that SLI is an option on your motherboard
If you only want one card, only have one card...also...
