I don't know how many of you actually read the Splash screens on the beta, but it says below that they purposely make Alpha Build Beta and then release Beta builds which are actually Release Candidates :p
I have no problems with the Memory Usage of FF3, I think its drastically improved.

Yeah that's the only reason I don't use it yet. I always have like 6 tabs or more at once.

I'll try the beta some time. Firefox has been lagging like hell recently - need to see if FF3 fixes that...
For betas, well, it depends who's making them I guess (some betas are very unstable). For browsers, it's unlikely that anything will happen to your system, so it's whether you really care about using them or not.
EDIT: no Firebug or Tab Mix Plus :( I guess I'll be sticking to Firefox 2 for now.
